Carob Cinnamon Cake

Recipe Ingredients

1 cup 237mlHoney
3 tablespoons 45mlUnrefined vegetable oil
4 tablespoons 60mlEggs (medium)
2 teaspoons 10mlVanilla
1 cup 237mlMilk or water
2 1/4 cups 140g / 4.9ozWhole wheat flour
3 teaspoons 15mlNon-alum baking powder
1/2 teaspoon 2.5mlSea salt - (optional)
2 tablespoons 30mlGround cinnamon
4 tablespoons 60mlCarob powder

Recipe Instructions

Preheat oven to 350F.

Measure honey into large mixing bowl, add vegetable oil and mix. Add eggs and blend with a spoon. Mix in vanilla and add milk or water well. Mix all dry ingredients to liquids, stirring constantly.

Grease and flour bundt pan or 13" x 9" cake pan. Pour batter into pan and top with 1/2 cup chopped nuts.

Bake at 350F for 30-35 minutes.
