Dairy Free Fruitcake Recipe - Cooking Index
| 1 cup | 160g / 5.6oz | Raisins |
| 2 cups | 474ml | Water |
| 1 cup | 198g / 7oz | Sugar |
| 2 tablespoons | 30ml | Shortening |
| 2 teaspoons | 10ml | Cinnamon |
| 1 teaspoon | 5ml | Nutmeg |
| 1 teaspoon | 5ml | Baking soda |
| 2 cups | 125g / 4.4oz | Flour |
Stew raisins in water until less then 1 cup of water remains. Chill until cold.
Drain raisins juice into a cup. Cream sugar, shortening and salt. Add enough water to raisin juice to make 1 cup of liquid.
Add raisins and liquid to sugar mixture. Add cinnamon, nutmeg, soda and flour. Beat until well mixed.
Bake in a greased and floured loaf or tube pan at 350F for about 1 hour.
