Traditional Friendship Fruitcake Recipe - Cooking Index
1 1/2 cups | 355ml | Vegetable oil |
2 cups | 396g / 13oz | Sugar |
3 | Eggs - well beaten | |
2 teaspoons | 10ml | Vanilla |
3 cups | 187g / 6.6oz | All-purpose flour |
1 teaspoon | 5ml | Baking soda |
1/4 teaspoon | 1.3ml | Salt |
1 cup | 146g / 5.1oz | Chopped nuts |
3 cups | 438g / 15oz | Chopped friendship fruit - well drained |
Mix together oil, sugar and eggs in electric mixer. Add vanilla and beat well. Stir together flour, soda and salt. Blend into batter, then mix in nuts and fruit.
Bake at 325F in a greased and floured Bundt, tube, or 9-by-13 inch pan for one hour and 15 minutes or until cake tests done. Let cool 10 minutes before removing from pan.
