Piccadilly Cafeteria's Homemade Salsa

Recipe Ingredients

1 cup 62g / 2.2ozDiced fresh tomatoes
1/2 cup 31g / 1.1ozCorn kernels - fresh or frozen
1/2 cup 31g / 1.1ozDiced onion
1 tablespoon 15mlChopped jalapeño peppers
2 tablespoons 30mlLime juice
2   Fresh garlic cloves - finely diced
  Tijuana Triangles
  Corn tortillas
  Green chilies
  Grated part-skim milk mozzarella cheese

Recipe Instructions

Combine all ingredients. Serve with low-fat baked tortilla chips, fresh veggies or Tijuana Triangles.

Tijuana Triangles: Cut corn tortillas into six triangles. Top with green chilies and a little grated part-skim milk mozzarella cheese. Place in a 350 degree oven to crisp tortillas and melt cheese. Enjoy!
