Lite Apple Nut Cake With Cinnamon Spice Glaze (4.5 PTS)

  **CAKE**
3 cups 187g / 6.6ozAll-purpose flour
1 1/2 teaspoons 7.5mlBaking soda
1 teaspoon 5mlSalt
1 teaspoon 5mlCinnamon

1/2 teaspoon 2.5mlGround cloves
1   Egg
3   Egg whites
1 1/2 cups 297g / 10ozSugar
1/2 cup 118mlCanola or other oil
3/4 cup 177mlButtermilk
1 teaspoon 5mlVanilla
2 teaspoons 10mlTart apples - cored and grated on (large) the large holes
  A cheese shredder
1/4 cup 36g / 1.3ozNuts (such as pecans or walnuts) - chopped
  **GLAZE**
1 cup 198g / 7ozPowdered sugar
1/8 teaspoon 0.6mlCinnamon
1/8 teaspoon 0.6mlNutmeg
1/8 teaspoon 0.6mlCloves
2 tablespoons 30mlSkim milk

Recipe Instructions

For The Cake: Heat oven to 350 degrees. Lightly coat two 9-inch loaf pans

with non-stick cooking spray. Dust with flour, tapping pan to remove

excess

flour. Set aside.

In a medium-size bowl, combine the flour, baking soda, salt, and spices.

Set

aside.

In the bowl of an electric mixer, beat together the egg, egg whites,

sugar,

oil, buttermilk, and vanilla until the sugar dissolves. Add the flour

mixture and beat on low speed for 30 seconds. Beat on high speed for 30

seconds longer, until no streaks of flour appear. Stir in the apples and

nuts by hand. Pour into pans and bake 45 to 50 minutes, or until a pick

inserted in the center comes out clean. Cool 15 minutes on a rack. Unmold

from pans and allow to cool completely.

For The Glaze: In a small bowl, combine all ingredients. Whisk to make a

medium-thick glaze. Drizzle over loaves and allow to set, about 30 minutes

to 1 hour.

Yields: 2 loaves or 24 servings.

Per serving: 188 calories, 5.8 grams fat (27 percent of calories), 2.8
