Chicken Satay - 3

Recipe Ingredients

1/4 cup 59mlChicken broth
1/3 cup 78mlWater
2 tablespoons 30mlSoy sauce
1   Minced clove garlic
1 tablespoon 15mlSherry or vermouth
1/4 cup 15g / 0.5ozMinced onion
2 teaspoons 10mlSugar
1 1/2 tablespoons 22mlSoy sauce
2 teaspoons 10mlGrated ginger
1 tablespoon 15mlBrown sugar
1   Minced clove garlic
1 tablespoon 15mlCatsup
1 lb 454g / 16ozBoneless chicken
1   Red pepper
  Toothpicks or skewers
1/2 tablespoon 7.5mlLime juice
1/4 cup 49g / 1.7ozCrunchy peanut butter

Recipe Instructions

Cut chicken in 1/2-inch strips. Combine next six ingredients.

Marinate chicken in refrigerator for several hours or overnight. Weave chicken on skewers. Microwave on high 6 minutes. Make peanut sauce by cooking garlic and onion in water.

(Microwave 1 minute.) Add remaining ingredients and cook until heated through.

(Microwave 1 minute.) Pour some of the sauce over chicken and serve with remaining sauce.
