| 6 | Basil leafs | |
| 5 oz | 142g | Anchovies |
| 2 tablespoons | 30ml | Olive oil |
| Peanut oil | ||
| 6 | Garlic cloves - peeled | |
| 3 tablespoons | 45ml | Vinegar |
| Water - if needed |
Wash anchovies to remove salt. Place anchovies, garlic and basil in a small food processor. Process adding oil as for mayonnaise. Add vinegar and process 1/2 minute. If too thick add a little water. Chill.
Great with toasts or crudites.
