Cafe San Pasqual's Three-Chile Salsa

Recipe Ingredients

3   Guajillo chiles - dried
3   Chiles de arbol - dried
1   Fresh jalapeno - green
1/3 lb 151g / 5.3ozTomatillos
1 lb 454g / 16ozTomato - ripe (medium)
2 tablespoons 30mlOnion - roughly chopped
2   Garlic
1/4 teaspoon 1.3mlCumin
1/4 teaspoon 1.3mlCloves
1/4 teaspoon 1.3mlMexican oregano
1/3 teaspoon 1.7mlSalt

Recipe Instructions

Combine chiles and dry ingredients and roast in hot frying pan for 1-2 minutes.

Place 1 cup of water in sauce pan and add all ingredients and cook uncovered for 10-15 minutes.

Transfer to blender and puree into a smooth sauce.

Serve at room temperature.
