Unicorn's Broccoli & Mushroom Quesadillas Recipe - Cooking Index
| 1 teaspoon | 5ml | Onion - chopped (medium) |
| 8 oz | 227g | Fresh mushrooms - sliced |
| 2 | Garlic - minced | |
| 1 | Parsley | |
| Oregano | ||
| Basil | ||
| 2 tablespoons | 30ml | Butter |
| 8 | Flour tortillas | |
| 2 cups | 292g / 10oz | Chopped steamed broccoli |
| 2 cups | 292g / 10oz | Grated mild cheddar cheese |
Saute the onion, mushrooms, garlic and herbs in the butter over medium heat until lightly browned, about 10 min. Spoon this mixture over 4 tortillas that have been placed on lightly greased cookie sheets. Top each tortilla with broccoli and cheese and a second tortilla. Bake in a 350 oven until cheese melts, about 10 min. Cut each quesadilla into wedges to serve. Serves 4.
